100 g flour
35 g sugar
1 pinch of salt
75 g butter
1 egg yolk
1/2 lime: finely grated peel plus 1 tb juice
2 tb lime jelly/jam (or more, if needed)
Using a food processor, mix all ingredients except the juice and the jelly to a smooth dough. Wrap with plastic wrap and refrigerate for about 30 minutes.
Heat the lime jelly to melt. Stir in the lime juice.
Divide the dough into 15 pieces, roll each piece to a ball. Cut the balls into halves, place on a baking tray (cut surface down). Using your finger or the end of a wooden spoon, make a indentation into the center of each cookie. Fill with lime jelly. Bake in preheated oven at 190 deg C for about 12 minutes or until the edges start to turn golden.
