Caramelized Peaches with Vanilla and Chili

Caramelized Peaches with Vanilla and Chili

500 g peaches, sliced into eighths
50 g sugar
1 orange, juice
1 ts lemon juice
1/2 vanilla bean, seeds only
1 dried red chili, lengthwise cut into halves, seeds removed

Lightly caramelize sugar with 1 tb of orange juice. Add peaches and stir gently until some juice occurs. Add vanilla seeds and chili, stir, then pour in orange juice and lemon juice. Let simmer for 2-3 minutes. Take from heat, remove chili and let cool.
