500 g figs, cut into pieces
4 limes, juice; plus grated peel of 1 lime
1/2 ts aniseed
100 g sugar
pectin gelling agent 3:1 for 500 g fruits
Combine figs, lime juice, peel and aniseed. Bring to a boil and mash (or puree, using an immersion blender). Add sugar and pectin, bring to a boil again and cook for 3 minutes, stirring constantly. Fill into jars and seal.
