Orange & Honey Pomelo Curd

125 g orange juice, freshly squeezed
--- I used 50 g of orange juice plus:
--- 75 g orange juice reduction (made from 150 g orange juice)
few drops of lemon juice
5 g honey pomelo peel, fine stripes
2 eggs
75 g sugar (or up to 150 grams, if desired)
115 g butter, diced

In a bowl, whisk juice, pomelo zest, eggs and sugar. Add the butter. Place the bowl over a saucepan with slightly simmering water. Whisk the mixture for 6-7 minutes or until it becomes thick. Remove from heat and pour through a strainer to remove the pomelo zest. Let cool (it will continue to thicken). Refrigerate.
