Chocolate Cookies with Lemon Pepper
100 g butter, soft
75 g sugar
about 1 ts lemon pepper (*), use less or more, depending on your taste
1 egg
150 g flour
75 g chocolate, 75%, not too finely chopped
1/2 ts baking powder
(*) I used a mixture of black pepper, lemon peel, lemongrass, coriander seeds and sea salt.
Combine flour, chocolate and baking powder, set aside. Mix butter, sugar and lemon pepper until smooth. Add the egg and whisk until pale and creamy. Add the flour mixture and mix at low speed just to incorporate, don't overbeat. Using two teaspoons, drop the dough onto a baking sheet lined with parchment paper. Leave enough space, the cookies will spread. Flatten the heaps just a little bit to adapt the height. Bake in preheated oven at 175 deg C for about 13-15 minutes or until the edges start to get golden brown.
