Bread Pudding with Curd Cheese and Plums

150 g white bread, from previous day, diced
100-125 g milk
50 g lavender syrup [1]
1/2 handful of mint, chopped
2 cardamom pods, ground seeds
30 g butter, soft
50 g lavender syrup [2]
1 egg, yolk and beaten egg white
250 g curd cheese, 10%
1-2 ts lemon juice
50 g semolina
600 g plums, small pieces
1-2 tb sugar, to taste

Combine bread cubes with cardamom and mint, moisten with milk and lavender syrup [1]. Put into greased baking pan (25x20 cm). Combine butter and lavender syrup [2], stir well until creamy. Add yolk and stir well. Stir in the curd cheese, semolina and lemon juice. Carefully fold in the beaten egg white. Spoon over the bread, cover with plums. Bake at 180 deg C for 40-45 minutes; sprinkle sugar over plums after 30 minutes.
