Plum Cake with Curd Cheese
dough:
100 g curd cheese
40 g milk
35 g vegetable oil
1 egg yolk
40 g sugar
1 pinch of salt
200 g flour
7 g baking powder
filling:
150 g sour cream
150 g curd cheese
1 egg
10-15 g rice flour (or corn starch)
50 g vanilla sugar
topping:
approx 500 g plums, eighths
1 tb (vanilla) sugar
Combine flour and baking powder, set aside. Mix other ingredients, stir well. Add flour, knead just a few moments, until the dough ist smooth. Roll out the dough on parchment paper, put onto the baking pan.
Combine ingredients for the filling and stir well. Pour evenly over the dough. Place plums on the filling. Bake at 175 degrees Celsius for approx 30 minutes, sprinkle plums with sugar after about half the baking time.
