Apple Orange Cake with Cardamom
75 g vegetable oil
75 g sugar
2 eggs
300 g flour
3-4 green cardamom pods, seeds finely ground
1 TB baking powder
75 g milk
400 g apples, coarsely grated and mixed with:
approx. 100 g (blood) orange juice, freshly squeezed
(blood) orange marmalade
Combine flour, baking powder and cardamom, set aside. Using an immersion blender, mix eggs, sugar and oil. Alternating add flour mixture and milk, then stir in the apples. Pour the batter in a greased springform pan (24 cm) and bake at 180 deg C for about 35-40 minutes or until an inserted toothpick comes out clean. Brush the hot cake with orange marmalade.
Note: The cake is very moist. For a more fluffy result you could try to use separated eggs, and fold the beaten egg whites into the batter after adding the apples.
