Hot Chocolate Cake
30 g cocoa powder [1]
3-4 TB water, hot
135 g sugar, including sugar 3 TB vanilla sugar
225 g milk [1]
250 g flour
60 g cocoa powder [2]
1 1/2 TS baking powder
1 1/2 TS baking soda
1 good pinch of salt
180 g milk [2]
90 g vegetable oil
2 eggs
Bring milk [1] to a boil. Mix cocoa powder [1] with water until smooth. Constantly stirring, pour mixture into the milk, add sugar and bring to a boil again. Keep hot until needed.
In a bowl, combine flour with cocoa powder [2], baking powder, baking soda and salt. Set aside. Mix milk [2], oil and eggs. Beat well, then add the mixture to the flour. With your handheld mixer running, pour in the hot cocoa milk. Mix briefly just until smooth, then immediately pour the batter into a greased pan (30x20 cm). Bake in preheated oven at 180 deg C for about 30 minutes (skewer test).
